Many countries across the world do not have sufficient or lucrative dairy industries and yet they can be able to access soybeans and coconuts. However, even with countries like Uganda with milk abundance, the short shelf life of dairy and the need to raise animals turns out to be a very expensive ordeal and non-environmentally sustainable. According to Smart Foods, many of the global processors and exporters of soymilk or non-dairy products that have a taste close to dairy need to add dairy milk powder, numerous emulsifiers and sweeteners to the soymilk/yoghurt or the entrepreneur/investor/processor will have to invest in very expensive sophiscated process equipment so as to remove/reduce the beany flavor, disagreeable taste, odor and/or color from the soymilk. However, the final product is not as close in taste to dairy and in some occasions, it loses the original intent of nutrition and health due to the added ingredients
The latest innovation that is now protected under Utility Model or 2nd class patent granted to Martin Ssali of Smart Foods Limited in Kampala, Uganda on 22nd December 2020 does disclose a product and process method for yoghurt as result of a unique blending process of soymilk and coconut meat. The final product has a no beany flavor, has a clean taste just like dairy products and when offered a blind product taste, one may not be able to tell the difference with dairy.
This latest invention is disclosed in Utility Model Application No. UG/U/2019 filed on the 22nd October, 2020 with priority on 19th October 2019 and granted on 22nd December 2020.
