Escarpment is also active in isolating native yeasts in an effort to create innovative and unique local flavours. With expanding local yeast isolation projects, Escarpment aims to help craft beverage producers make products with a true sense of place.
For example, Escarpment has validated the use of a wild yeast strain, which was originally isolated from an Ontario apple orchard, and was subsequently used by Wellington Brewery to produce a commercial batch of a farmhouse ale called “Apples 2 Oranges”. This yeast was also used by Great Lakes Brewery (2014 Canadian Brewery of The Year) to produce the official 2015 Ontario Craft Beer Week collaboration beer, a Belgian-style table beer intended to showcase the unique character of this local Ontario yeast.
Escarpment yeast has already been adopted by Wellington Brewery, Royal City Brewing, Block 3 Brewing, Lansdowne Brewing, Nickel Brook Brewing, Revel Cider, Sawdust City Brewing Co., Stack Brewing and Red Line Brewing, with many more planned collaborations. The market is not limited to the craft beer industry; there has been interest from the cider and craft distilling industries, and Escarpment is actively working with partners in these industries to validate new applications for our yeast products.
