EVA is a small and well-designed appliance that contains all the most modern technologies, typical of industrial plants (patent pending). The Pulps are frozen olives pulp. This product guarantees standard of excellence and has been developed in collaboration with Universities, Olive Growers and Food Processor. Our Pulps allows the creation of the right condiment for any dish «mixing» olives with different notes, which depend on cultivar (variety), terroir and degree of ripeness. Moreover, everybody could create the own condiment adding to the pulps spices and ingredients during the extraction process to find the right oil for any dish.
The Pulp that remains after the extraction process (lasting 20’) can be reused for many recipes (e.g. Veggie burger) avoiding the current waste of 10M/t.
Why Fresh Oil? Behind the popular saying “Old Wine, New Oil” there is a scientific reason: aromatic notes and nutritional values can be compromised over time, especially if during the transport and the storage the temperature (between 10°-20°) and the exposure to light and air have not been respected.
Olives pulps are obtained with established technologies, put together in an innovative way.
This layout gave life to the CRIO-Oil Mill that can be installed in any of the 4,000 traditional oil mills in Italy or at a frozen food manufacturer. The impact of this model on the ecosystem is explosive. FRESCO, in fact, is not only changing the way we eat, but is revolutionizing an entire sector safeguarding biodiversity, reducing waste and helping olive growers.
